Aged And Dried. Eden Bonita Flakes a rich component of traditional dashi noodle broth / soup stock. Bonito a type of mackerel is steamed and dried to wood-like hardness then shaved into flakes. A hearty versatile seasoning. Use on salads vegetables tofu and in soups and stews.

High quality/great for Dashi, and for ailing cats

"I used to put dried mushrooms to soak when making Dashi instead of bonito flakes because I couldn't find them at the time. Bonito flakes are an essential component to the overall flavor of Dashi. I am also using them to supplement wet cat food. A sick or elderly cat can stop eating and die; the addition of flakes gets them to eat again."

If you understand what it's for, it's amazing

"Use this to make dashi, and unlike what some reviewers here have said here, it is an absolutely crucial ingredient for the uses it has. It has no real substitute and just mixing miso paste without the dashi will result in a flat miso soup.
Also, make the dashi in bulk, and freeze it into dashi ice cubes in a silicone ice cube tray. Keeps for months and makes it super easy to make homemade miso soup in a flash."

"They sell the same thing marketed for cats and the price is many times higher for less. Noticed these for human consumption - cannot tell the difference as far as my eyes and nose goes and there's only 1 ingredient - no preservatives. Vitacost's price is the best and the cats go CRAZY for them!"

What is this for?

"I had a recipe that called for these Bonito Flakes for a Japanese style soup. You soak the flakes then discard. Couldn't really taste much in the water. Didn't really feel that it added anything. Won't buy again unless my Japanese friend tells me I omited something."
