"These are useful to add flavor to teas, coffees, and sachets; without having powder clogging up the filters or having grit in the liquids (like pickling spices). I've been using cinnamon chips in coffee for years. When I ran out, and tried using powdered cinnamon, the filter clogged and ran over onto the counter. Try them and see the difference chips can make."
"These are more like chips of cinnamon pieces. They are coarser than a coarse grind. It is hard to explain how they are ground and even harder to figure out what anyone would do with them. They are too big to add to a dish and if you add them to a tea you would end up spitting out little chunks. You could put them in a sachet or a tea bag, but why do that when you can buy cinnamon ground or cinnamon sticks?"
