Outstanding mellow miso.

"I've had many misos over my life, and this is one of my favorites.
If you want a bold, dense miso, this isn't for you. This is mellow, sweet, light, and has caramel notes to it. A beautiful combination of mild sweet and savory.
Perfect for dressings and condiments, and light summer soups.
I use this in Scott Jurek's vegan cheese recipe for pizzas, and it is a winner. Perfection, absolute vegan cheese perfection.
For soups in the winter, you may wish to purchase a denser, rich miso -- although I like this for a light broth, it won't give that hearty winter satisfying filling taste you may be looking for.
For most everything else, I am besotted."

Great miso for making vegan cheese

"Shiro miso is sweet, mild and mellow. It is not a strong brown miso so just make sure you get the one you actually need for whatever recipe you are using. I use this all the time to make my vegan cheese and it is perfect."

"This doesn't have a miso taste to us. Even though it says aged and fermented, we can taste neither as compared to miso pastes we've purchased over the years.
We do like the genmai miso purchased on this site, and will now purchase the mugi to try it."
